Hello members of the Elegant Winery family. Last week I received and email from Mr. Gatsby in reference of a new wine list for his restaurant in Brooklyn, New York. I went to work and started forwarding all heads of each departments to get this done and everyone has done a great job in research and giving the breakdown in how to profit as well. The featured wins that will be submitted:

RED WINES:
PINOT NOIR Porter-Bass Winery, Poco a Poco, Mendocino, California 2012 17.
SYRAH Pierre Gaillard, Clos de Cuminaille, St. Joseph, Rhône Valley 2009 19.

SWEET WINES:
SEMILLON Château Guiraud, Sauternes, Bordeaux, France 2001 12.
GAMAY Patrick Bottex, La Cueille, Bugey-Cerdon, France 12.

WHITE WINES:
SAUVIGNON BLANC Alban Roblin, Château La Rabotine, Sancerre, Loire, France 2012 12.
RIESLING Pewsey Vale, Contours – Museum Reserve, Eden Valley, Australia 2008 17.

After going over the information that was gather I feel that these wines are great selections when serving by the glass. These wines are wines that majority of the customers can relate to. When pricing these wins by the bottle their not far off in price and keeping serving sizes at 5 ounces per glass will allow Mr. Gatsby to capitalize on his profit. The formula used: menu price=100x (cost of wine) / 25% and this gives us the wine cost.
