A taste of California Wine

 A taste of California Wine

When wine drinkers are seeking good quality wine, they look for reasonable pricing in these cash-strapped times. Wine pricing formulas require a few intangible factors. When serving wine in your establishment a lot of factors need to be considered, the kind of operation will you being running, the type of customers do you want to attract and how important is wine to you. The wine I chose for my list range from the region of Italy and they are California base wines. I personally enjoy California wine because of the quality of the grapes and the price is quite tasteful.

The purchase price of the bottle is what should be charged for a glass of that wine.  If the bottle price is more than what you want to charge your guests for one glass of wine, there is wiggle room, just get the price as close to the bottle price as possible. Multiply the glass price by 4, minus $1. ( Bottle price x 4 – 1=per glass) the price you end up with is what you will charge your customers for one bottle.

Subject: wine list and pricing
Mr.Williams,
I have provided you with the wine list that you requested, and I also gave you prices for each of the wines by the glass. The way I figured out how much to charge for each glass was the following, I divided the bottle list price by the number of glasses I got per bottle; this determines the price of each glass. Usually you can get 6 glasses of wine out of a 750milliliter bottle, therefore I am pricing according to that factor. I chose to break down the wine list taking into consideration the size of our menu wine list.
Generally restaurants break down wine list in this fashion, small list break down into categories such as reds, whites, sparkling wines, blushes and desserts. Larger wine list May include sub-categories for country and region and/ or grape type, and if it is a really sophisticated list it often breaks down further into regions. Having wine in tour restaurant can take a good meal and heighten the enjoyment even further. This is why it is so very important to pair the right wine with the right food. Alcoholic beverages including wine can easily provide more profit than any item in your menu. The right pricing will maximize the sales and profits of your establishment, however you should price fairly by all industry standards. I hope that the information that I have presented, has been informative and that it is to your satisfaction, if you have any further concerns regarding this list feel free to call me, thank you.

Re: WINE LIST FOR COSTUMERS

Hello members of the Elegant Winery family. Last week I received and email from Mr. Gatsby in reference of a new wine list for his restaurant in Brooklyn, New York. I went to work and started forwarding all heads of each departments to get this done and everyone has done a great job in research and giving the breakdown in how to profit as well. The featured wins that will be submitted:

RED WINES:
PINOT NOIR Porter-Bass Winery, Poco a Poco, Mendocino, California 2012 17.
SYRAH Pierre Gaillard, Clos de Cuminaille, St. Joseph, Rhône Valley 2009 19.

SWEET WINES:
SEMILLON Château Guiraud, Sauternes, Bordeaux, France 2001 12.
GAMAY Patrick Bottex, La Cueille, Bugey-Cerdon, France 12.

WHITE WINES:
SAUVIGNON BLANC Alban Roblin, Château La Rabotine, Sancerre, Loire, France 2012 12.
RIESLING Pewsey Vale, Contours – Museum Reserve, Eden Valley, Australia 2008 17.

After going over the information that was gather I feel that these wines are great selections when serving by the glass. These wines are wines that majority of the customers can relate to. When pricing these wins by the bottle their not far off in price and keeping serving sizes at 5 ounces per glass will allow Mr. Gatsby to capitalize on his profit. The formula used: menu price=100x (cost of wine) / 25% and this gives us the wine cost.
